Travelife was invited to experience the charm of Madame Fan at the NCO Club during ILTM Asia Pacific 2022 (International Luxury Travel Market ), a bespoke tourism show held in Singapore.
We had pre-dinner cocktails at the swanky Cool Cats where the live jazz band entertained. This was my first time back at the JW Marriott Hotel Singapore South Beach since the relaxation of COVID-19 restrictions, and I learned more about the upcoming reopening (by the end of 2022) of the Fish Pool, a caviar and oyster bar which has its own Olympic-standard Diving Pool, and on some days, even a mermaid!
Madame Fan is the culinary anchor at the NCO Club and Chef Yit definitely showcased his culinary flair by presenting contemporary Cantonese dishes with a modern twist. I loved the ambiance of the restaurant where it exuded an old-world charm, and the impeccable attention to detail by the staff that evening really made the evening a memorable one.
Of course, I was also fortunate to be seated in good company, where the General Manager of The Ritz-Carlton, Nikko – Alexander Westwood McBride shared how the hotel is situated inside the Nikko National Park and is the first Ritz Carlton hotel to feature an authentic hot-spring experience in the Japanese onsen tradition. I’m already planning to visit this first international luxury hotel in Tochigi prefecture, two and a half hours north of Tokyo by car or rail.
We were initially stumped with what the filling was for the Mooli Puff and upon biting into the flaky thousand layers pastry, I was surprised how well the radish filling was a perfect complement.
The menu for the evening was delightful and my favorite was definitely the restaurant’s signature soup – the Four Treasure Soup with Sea Cucumber, Fish Maw, Dried Hokkaido Scallop, Crab Meat.
Another dish that really impressed was the Charcoal Grilled A4 Wagyu Beef in Black Pepper Sauce. The beef was cooked perfectly and it was so tender. and juicy!
Another signature dish I would definitely recommend is the Lobster Wanton Noodles. We were all so full from the fine cuisine served that evening, but everyone at the table managed to finish the penultimate dish that was served before dessert.
